Pickled Water Melon Rind

Pickled watermelon was made seasonally by German immigrants traveling to Russia and were made usually for winter preserving. The entire watermelon was stored in brine in wooden barrels. After canning jars were invented, they started to pickle just the red part of the watermelon while other ethnic groups started pickling the rind.
Pickled watermelon rind is somewhat time intensive to make, but well worth the effort. After you eat some, give it to you friends and family... But Beware! They will definitely bug you to keep making more!
