Panko Crust Florida Avocado Fingers

Avocado is healthy and makes a great side dish or appetizer. Try this recipe for baked avocado to serve at your next meal.

Which do you prefer? Florida avocados or Hass? Florida avocados are popular in Florida and Caribbean Islands and are known for their large size and delicious taste. Florida avocados are also lower in calories than Hass avocados because they have a lower fat content. They also have a milder flavor due to their lower fat content. Avocado fat is considered to be a healthy fat. There are many ways to prepare avocado so you can enjoy it almost any time of the day. We found this recipe that can be served as an appetizer or side dish.

Ingredients:

  • 2 Florida avocados, peeled, seeded and sliced
  • 1/ Lime, juiced
  • Olive oil for drizzling
  • Non-stick cooking spray
  • 1 Cup whole wheat flour
  • 2 Cups panko bread crumbs
  • 1 Egg slightly beaten
  • Sea salt and fresh ground pepper, to taste

Directions:

  1. Preheat oven to 400 degrees.
  2. Lightly spray a cookie sheet with the nonstick cooking spray. In a mixing bowl add the avocado slices and lime juice, season lightly with salt and pepper.
  3. Carefully toss avocado to coat. Remove seasoned avocado from the bowl and coat them completely with the flour.
  4. Dip each flour coated avocado slice into the beaten egg to coat. Coat each egg dipped avocado slice with the panko bread crumbs.
  5. Place each evenly coated avocado slice on the cookie sheet.
  6. Lightly drizzle olive oil onto the coated avocado slices.
  7. Place avocado slices into the preheated oven and bake for about 15 minutes or until golden brown.
  8. Serve warm with your favorite dipping sauce.
